Brewed in May 2020 with a grist of Pilsen malt from Valley Malt, Redeemer raw red wheat from Nitty Gritty Grain Company, flaked oats, and aged Styrian Golding hops. Open fermented in a cherry wood foudre with our resident mixed culture. Post primary ferment, the young beer went to rest into Cab/Sav wine barrels. In August 2020, we transferred the beer onto Montmorency Tart Cherries from Breckknock Orchard along with wildflower honey from our Nordic Farm Apiary. A slow fermentation for the next few months, prior to conditioning in the bottle. Limit 2 pp.
