Part of our Funk on the Water 2021 vintage bottle release:
5a Anniversary Wild Ale was brewed in the fall of 2019 with @vermontmalt Pilsen malt and raw wheat from @NittyGrittyGrain. This beer was fermented in a 10hl open top oak Foudre with our house mixed culture. A third of the fermentable ingredients in this beer were raw wildflower honey from our apiary, as well as @FrenchHillApiary here in Vermont. Post fermentation and aging, we moved this wild ale to 500l oak Puncheons where we added the addition of aged hand-hewn Vermont Eastern Red Cedar and Bergamot Citrus. Bottled in January 2021, this beer puts forth notes of earl gray tea, candied ginger, bergamot and curry spice. A unique beer that we are truly proud of.⠀
